The red pozole is a meat stew originating from Jalisco and Sinaloa very typical in Mexican popular festivals. And since they take life with flavor there, it is made from white hominy corn, with lean pork in tacos, onion and spices, and cooked over low heat so that it is well soaked in flavor. Indescribable!
